Raised on a family farm in Oldstead, Tommy Banks transformed The Black Swan into a Michelin-starred destination and became one of Britain’s youngest chefs to retain a Michelin star. 

His cuisine begins in the soil with much of his produce grown on the family farm - and extends into creative preservation, fermentation and whole-ingredient cookery. Tommy also oversees Roots in York and The Abbey Inn at Byland, expanding his vision of sustainable British hospitality. His food is honest, expressive and deeply connected to a sense of place.
